Old Fashioned Peanut Butter Cookies

finishedpbcookieI live by a hipster coffee shop that always has the most beautiful pastry displays. Lately, they have been selling these little bags of classic peanut butter cookies, and needless to say, I’ve been inspired to concoct the perfect recipe. I have tried many in the past, some using an equal ratio of vegetable shortening to butter, others where you roll the dough in sugar before baking. I never quite liked the lack of flavor that occurred when vegetable shortening was used in the recipe, therefore these cookies have only peanut butter and browned butter for the fat portion.

The Ingredients:

1.5 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup browned butter, see how to make it here

3/4 cup peanut butter

1/2 cup sugar

1/2 cup brown sugar

1 teaspoon vanilla extract

1 egg

  • Brown the butter on the stove, place in large mixing bowl
  • Add peanut butter, vanilla extract, and sugars to mixing bowl, allow to cool for a bit
  • Add egg to butter mixture
  • Preheat oven to 350 degrees
  • In a separate bowl, combine the flour, baking powder, and salt
  • Add flour mixture to butter mixture until just combined
  • Chill in fridge for 15 minutes
  • Scoop dough into balls, flattening them out with a criss-cross using a fork
  • Bake in the oven for 12-16 minutes or until golden brown
